After work, upstairs: SEED Rooftop at Hyatt Regency Malta

Malta gets around 300 days of sunshine a year, which means the calendar and the weather spend most of autumn disagreeing with each other. October here still behaves like summer, and the terraces know it.

For Malta's iGaming community, much of which works within a ten-minute walk of it, SEED Rooftop is a straightforward proposition. Leave the office, go up rather than out, and be sitting down with a drink with the Maltese skyline in front of you before the sun has finished with the day.

SEED Rooftop sits in the middle of St Julian's, one of the island's busiest districts, but above and apart from the Paceville crowd below. There's no drive, nor logistics. You finish for the day, and you're there.

There's something worth catching in arriving while the light still has somewhere to go. The pool, the skyline, a cocktail, and no particular hurry. Then, as the sun drops, the terrace changes character, glassware catches the last of it, the music comes up, and the conversation gets louder. Whether you're out by nine or staying until the final track is entirely your call.

Two nights a week give that arc a bit more structure. Beat the sunset runs on Wednesdays and Fridays from 18:30, with a menu built for the table and resident DJs playing the light down. Mid-week or end-of-week, it's the same idea: somewhere to put the working day down properly.

The food is Mediterranean at heart, drawing on local seasonal produce with clear influences from the Middle East, Asia and Latin America. Olive oil, citrus and fresh herbs run through everything, though the flavours travel further than that. It's all designed to be shared, which is the point. The menu works best when the table explores it together, all while the cocktail list carries the same signature.

For anyone whose team drinks tend to become something larger, the terrace can also be booked exclusively or non-exclusively, with drink packages, pass-around menus or seated sharing menus depending on the occasion. That covers a welcome reception at the front of a conference just as easily as a private evening for the whole company.

SEED Rooftop is one part of a three-space concept. Downstairs, SEED Brasserie handles the rest of the day: breakfast and dinner in a more sheltered setting, with the same ingredient-led kitchen and space for smaller private groups. SEED Café covers coffee and pastries. Between them, the concept runs from a morning espresso to a late night on the terrace.

There's a good stretch of summer left. There's also still a Wednesday and a Friday in every week. Summer will not wait for your inbox to empty; there is still time to close the laptop, head upstairs, and enjoy it to the last drop.
